Kitchen Gadget Giveaway Contest, Week #4


Wow, March has just flown by! My month has been all sorts of crazy with a mini remodel going on at our house (most of our furniture is still outside the house in a POD storage container) and our wild week in Panama… Thankfully, while I’ve been “preoccupied” Joy has been cooking up a storm and taking some beautiful pictures of her creations to share with all of you. Muchas gracias, mi amiga! Joy is one of those friends you can count on when life gets crazy – she is always there when you need her. Which leads me to the question of the week:

What do you keep in your pantry (or freezer) to sustain you when
life gets so crazy you just don’t have the time or energy to actually cook?

For me (this is kind of embarrassing) it’s Lean Cuisine, Annie’s Macaroni and Cheese, and Costco frozen chicken breasts with Soy Vay teriyaki sauce from Trader Joe’s. Or, more often than not, a trip to Taco Time or Starbucks.

How about you? I am hoping some of you have better emergency food plans in your house. I could use some help!

    My wife usually stocks tuna, frozen meatballs (like mentioned above), and lentils to make quick recipes. (Yum, lentil soup…. we could live on that stuff 🙂 ). Cans of tomatoes and frozen veggies also help out in a pinch!

    I break down family packs of meats and freeze portions that are quick to thaw & grill. Other, for variety, meatballs and pasta, Steam in the bag vegetables and always BACON for a quick breakfast for dinner meal during the week.
    Recently I started adding smaller vegetables to the crock pot to save prep time and they do just fine on whole, such as small red potatoes and small onions, carrots, etc. Time counts during the mornings!

    We always have frozen shrimp (13-15 size) in the freezer. They thaw quickly and I can either saute them in some oive oil, kalamata olives, tomatoes, etc and then with pasta or quick season and onto the grill. The kids love them and of course, so do the parents. There is a little bit of cooking, but easy cooking. Especially with an adult beverage to help wind down.

    Lots of pre-made turkey meatballs and quarts of pasta sauce to go with it; by the time I re-heat them my pasta is usually ready. Also an army of cans of tuna that I either mix with Greek yogurt and dill and put in a sandwich, or over a bed of lettuce and other veggies. Tuna was a life-saver in college, I’m telling you.

    my freezer always has something that i have prepared in quantity w/ the idea of freezing a portion of it. it can be quiche or stuffed potatoes or squash, fruit from the summer, applesauce ….. oh yes and home baked bread. just restocked today in fact w/ a whole wheat and molasses quick bread with seeds and dried fruit. so yummy and quick to pull together. and i sometimes have Amy’s frozen food also but since that tends to be a bit pricey i try not to go that route too often

      Jacquie, I am jealous of your freezer stocked full of homemade food! I’d love to try your quick bread if you’d be willing to share the recipe!

  6. My freezer is usually filled with my prepared pasta (and sometimes accompanied by Mr Meatball) sauce that I have prepared in my over-sized cauldron on some said rainy Sunday afternoon. I also have frozen chicken breast from Costco that are easily thawed within an hour in a warm water bowl. My fridge is always stocked with mushrooms, lemons, capers, white wine and some veggie, and shallot and garlic abound me always. These items are basics for me during the week. I often prepare Chicken Piccata with side veggie and pasta or rice. Fast, easy, and predictably delicious. Alternative emergency food – the smoothie of ice, yogurt, (frozen) fruit, milk all whirled and frozen pizza (for the kids of course)!

    Anything from Amy’s line of frozen food– from Mexican to Indian, I find it all to be incredibly good. And generally, as frozen, pre-prepared foods go, not full of too many crazy additives. But I know I need to scale back on my schedule when Amy is present at my table for an entire week!
