(Heart-shaped) Grilled Cheese and Tomato Soup

My mom taught me that showing LOVE through food doesn’t have to be time-consuming and complicated.  My nieces were SO excited when I picked them up from school and informed them that we were going to have Grilled Cheese and Tomato Soup for dinner.  Ana said, “YAAAA-wait!  What?”  to which Grace explained, “You know, it’s that red soup”.  They both agreed that this was the perfect choice for our impromptu Valentine’s Day celebration together.  Whatever you choose to do for your loved ones for this special day, I hope it makes you feel mmm…mmmm…good inside 😉

(Heart-shaped) Grilled Cheese and Tomato Soup

Ingredients (per person):

2 slices whole-grain bread
3 slices cheese (kids LOVE American slices)
1 tsp. spreadable butter

1 can Campbell’s Tomato Soup
1 can milk (or water)

Lightly spread one side of each slice of bread with butter.  Place cheese evenly inside the sandwich.  Toast lightly in a non-stick skillet over medium heat, gently pressing down on the sandwich to melt the cheese.  When the first side is golden brown, flip the sandwich to brown the other side.

Meanwhile, heat the soup and milk (or water), in a small saucepan over medium heat, until boiling.

Place the sandwich on a cutting board and cut it with a heart-shaped cookie cutter.  Cut a small slit at the point of the heart if you want to balance it on the edge of the soup mug/bowl.  Serve with LOVE!
