Coconut Water Chiller

Coconut water!  It’s everywhere.  Have you noticed?  I recently picked up a bottle to see what it was all about and now I’m hooked.  Coconut water is a low-calorie (about 5 cal/oz), ultra-hydrating (due to the electrolytes) alternative to plain water, but I’m not a fan of drinking it solo.  So, I started poking around my refrigerator for refreshing, cooling ingredients to throw into the blender with my coconut water and ta-da!  I find this refreshing, and invigorating, and delicious.

Ingredients
  • 8oz. coconut water
  • 1 Tbsp. fresh lime juice
  • ¼ cup pineapple chunks
  • ½ cup cucumber, diced
  • 5 mint leaves
  • 5 ice cubes
Instructions
  1. Blend it all up and garnish with mint and a cucumber slice. EnJOY!

  1. I mix half and half coc. water with club soda and strawberries with ice in a blender. Very refreshing also and no sugar added.

  2. My husband bought the sweetened coconut water and it was wonderful! Then I looked at the can – uh oh. The regular stuff is quite different. ;-) So it’s nice to have things like this to add to it! Thanks. Cheers~

    • I’m a little scared to try the sweetened version, Carrie, for fear that I’ll like it too much ;) Kinda like I wish I’d never tried a Breve Latte at Starbucks.

  5. This sounds great! I am fan of C.W. too. After so much eating and drinking this weekend, I am looking forward to some cleaner tastes this week. Time to detox a little…
